 "Jalapeno Moose Poppers"

Stuff you'll need...



 (Adjust ingredient portions to # of guests you're having) 

1) Moose steak or roast cut into thin strips (tenderise the tougher cuts with a wooden mallet)
2) Jalapeno peppers seeded with tips and stems cut off (keep the stems for later to keep in all the cheese)
3) Cream Cheese ( Original or Flavoured it 'syour choice)
4) Thick-cut Peppered Bacon (or any thick cut  your choice)

How you make it...

   Once you have all the ingredients have been prepared....

~ stuff peppers with Cream Cheese (place stem back on)
~ roll peppers and cheese in the moose strips
~ wrap with bacon
~ secure with a toothpick
~ season with favorite grilling spices/ herbs/rubs/sauces
~ grill until bacon is crispy and Moose meat is cooked through
~ Enjoy

~ ready for the grill!

Beautiful, Kakabeka Falls, ON.


Kakabeka Falls is a small village situated 30 KM West of  Thunder Bay, ON. with about 5800 residents.  The falls themselves are part of the Kaministiquia River ( Ojibwa : River with islands) . which stretches from it's mouth at Dog Lake 44 KM to the North to where it empties into Lake Superior at Thunder Bay.  Talk about a "Dog-leg river".

Kakabeka Falls is the 4th deepest in Ontario with an impressive 130FT drop.  The gorge and escarpment of the falls are comprised of loose shale that contains sensitive plant life and fossils from the last known ice-age; travelling to the bottom of the gorge is strictly prohibited. But man what breathe taking photo opts.

Fish IQ:Every year, vulnerable Lake Sturgeon travel up the Kaministiquia River to spawn at the bottom of the falls.  Other fun fishy facts, you can fish for and catch a wide range of species like #Walleye, #Bass, #Pike & #Perch! #fish_on in   Kakabeka Falls!!  With 3 Bait shops to choose from, we're sure you'll get the straight goods on where to fish, and for what.

When I woke up this morning and I saw there was snow on the ground I had a powerful urge to crawl back into bed, but my stomach wouldn't let me.


Snow already, but I'm not!

I looked around my kitchen for inspiration, and there on the counter was my sons Pie-Pumpkin he got at a local farm during a recent school trip.  Pumpkin Pie, that always gives me that warm fuzzy feeling on a day like today.

Winter's Warning Pumpkin Pie

Ingredients:

1 Pie-Pumpkin (Yield 2 Cups)

2 Eggs lightly beaten

1 Can Evaporated Milk

3/4 Cup Packed Brown Sugar

1 Premade Pie Crust (Pillsbury Refrigerated Pie Crust) I'm a guy who has time to make crust from scratch!

1/2 Teaspoon Ground Ginger

1/2 Teaspoon Nutmeg

1/2 Teaspoon Cinnamon

1/2 Teaspoon Salt

Method:

Cut pumpkin in half, and scoop out the guts, place halves on baking sheet skin side up and bake for 45 minutes at 350F.
Allow pumpkin to cool, remove skin and mash flesh in a large bowl, add eggs, spices, sugar, and E.Milk.
Bring Pie crust to room temperature and unroll into a standard pie plate, pour puree into pie shell and bake at 400F for 40 minutes.
Serve with Whipped Cream topping.

 

 




The Ultimate BBQ Ribs





BBQ Ribs


           Start with 2 racks of pork ribs rinse and pat dry with a paper towel

  • Preheat oven to 350 * F
  • carefully remove the "blue-skin from the underside of both racks
  • use a commercial or home made dry rub seasoning, and thoroughly coat each rack
  • place both racks in a large roasting pan 
  • pour about a 1/2 inch to 1inch of Apple cider into the bottom of the pan
  • Bake for 2 hours


  • after 2 grueling hours remove the ribs and drain the cider
  • transfer ribs to a cookie tray and sauce generously with BBQ sauce
  • crank up the stove to 375*F and return the sauced ribs for an additional 15 mins.
  • sauce the underside of the ribs a continue baking for another 15mins.



Cola BBQ Sauce

  • 1 cup of  your favorite cola
  • 1 cup Ketchup (Heinz)
  • 1/4 cup Lea& Perrine's Worcestershire sauce
  • 1 tsp liquid smoke or ( substitute 1/2tsp sesame seed oil) 
  • 1/4 cup A-1 Steak sauce
  • pinch* of onion powder *1/2 tsp
  • pinch* of garlic powder
  • 1/2 tsp of cracked black pepper
In a medium sauce pan combine ingredients and bring to a boil on high heat
back off the heat and simmer for 6-8 minutes and transfer to a mason jar
and allow to cool at room temperature (bbq sauce can be stored in the fridge for several months)
